Nourishing Marshmallow Bars | Healthier Rice Crispy Treats

Homemade marshmallows are all the rage right now and as much as I love adding a marshmallow to some bone broth hot chocolate, the main reason I like marshmallows is because I like Rice Crispy Treats. I searched high & low for a Rice Crispy Treat recipe with nourishing homemade marshmallows but didn’t find anything that looked appealing. So, I took it into my own hands and thankfully it wasn’t very difficult!

Making marshmallows is one of the most mesmerizing and exciting processes as you watch a clear-ish liquid whip into a thick bouncy marshmallow fluff. I highly recommend doing it with a pal, a spouse and/or a child so you can delight in the process together!

Recipe:
• Filtered water
• 1 tsp vanilla extract
• 1/4 cup Perfect Supplements Grass-Fed Gelatin (Use discount code: Audrey10 for 10% off!)
• 175 grams of honey (Get a food scale here)
• Pinch of salt
• 6 tbsp butter of your choice (I use Kerrygold!)
• 9-10 cups (or more depending on what texture you want) of organic rice crisps — I found mine at sprouts!

Directions:
1. Add 1/4 cup gelatin to 1/2 cup filtered water in a large mixing bowl & let it bloom.
2. Meanwhile, heat 1/3 cup of water, 175 grams of honey, a teaspoon of vanilla extract & a pinch of salt over medium heat until completely melted and combined.
3. Start slowly melting butter in a large pot over low heat.
4. While the butter is melting, start mixing bloomed gelatin with an electric mixer and slowly pour in warm honey mixture. Gradually increase the speed and mix until it’s marshmallow-y (about 8-12 minutes depending on how fast you mix).
5. Pour entire fluffy mixture into the pot with melted butter and quickly stir until fully combined. Once combined, remove from heat.
6. Let mixture cool for a few minutes and add the rice crisps. Stir together.
7. Quickly scoop into parchment paper lined pan and pat mixture down with wet hands & let sit for an hour!
8. Cut and store in an airtight container for up to a week.
