The best curry chicken salad recipe
This chicken salad is a household favorite for my husband and I. It is super easy and just so.dang.delicious. I love to put it on thin rice cakes with avocado slices on top, however it’s also super good on sourdough, with plantain chips or crackers, or even just on a bed of greens! YUM!
Recipe (serves 6)
- 3 cups of canned or shredded chicken 
- 1/2 cup of vegan or regular Mayo (I linked my favorites clean ones) 
- 1 tbsp curry powder 
- 1 tsp turmeric 
- 1 tsp garlic powder 
- 1/2 tsp salt 
- 4-6 stocks of celery 
- 1/2 cup roasted pecan or cashew pieces 
Directions:
- Add chicken and mayo to a large bowl and stir until well combined. 
- Add spices and stir 
- To finish, add chopped celery & pecans to the mixture and stir one last time. 
- Store in airtight container in the refrigerator for up to a week!
