Gluten Free Banana Collagen Muffins
Makes 12-15, depending on how big your bananas are! I LOVE these reusable silicone baking cups!
Ingredients:
- 3 ripe bananas 
- 1/2 cup cassava flour 
- 3/4 cup coconut sugar 
- 4 scoops collagen — I love & use both Perfect Supplements (Code: AUDREY10) or Equip (Code: HEALTHYHONEY) 
- 2 eggs 
- 1/4 cup coconut oil or butter melted 
- 1 tsp vanilla 
- 1/2 tsp cinnamon 
- 1/2 tsp baking soda 
- 1/2 tsp sea salt 
- 1/2 cup dark chocolate chips 
Directions:
- Preheat oven to 350 Fahrenheit. 
- Mash bananas in bowl & then add the rest of ingredients minus the chocolate chips 
- Mix everything together with an electric mixer until smooth! I like for there to still be some chunks of banana. 
- Fold in chocolate chips. 
- Scoop evenly into muffin tins and bake for 20–22 minutes, or until golden brown & middle is not jiggly1
